This morning was so beautiful it was breathtaking. Cherry blossoms blooming with their sweet perfume and hot sunshine. I dug more around my stump and became so hungry, things are different in the heat. LeRoy's is a cart I've wanted to check out for some time. I had a really good meal. It was slices of tender beef brisket and a mild BBQ sauce on a slice of white bread. There were a choice of sides, and I got collard greens and a spicy coleslaw. The slaw was crisp and flavorfull, the collards were not overcooked, but just right and very simple. There was a poster up on the side of the cart advertising the Willamette Week food cart festival. It's April 18th from 5:30 to 9:30 at 8271 North Interstate Avenue, near the Denver MAX stop. Sounds like fun, I think I'll be going.
