Egg sandwich with bacon

The egg sandwich changes a lot as it follows the season. We were doing bok choy, then we switched to pea greens, as shown in the photo, then we moved on to basil. This particular egg has a very flat yolk, which I like to err on the side of. A soft yolk in an over easy egg is like a giant cannon waiting to go off. I think the logistics of the sandwich are very important to consider!
