I've been working on getting a good source of chocolate. I've bought from a place called Vintage Plantations in New Jersey, from Chocosphere in Tualatin, and now Cacao. Cacao imports from a Swiss company, Felchlin. Cacao is a chocolate shop just down the street from me, at SW 13th and Stark. So that's very convenient. The shop is run by two guys, Jesse and Aubrey. Jesse dropped off these four chocolates. The 68% cru sauvage was incredibly creamy with a fruity flavor. The 72% arriba is nicely bitter with a coffee character. Apparently Aubrey used to work at Felchlin. I've never had this type of chocolate before. They seem to be focused upon a long conche process.
