Since doing all the wine tasting in Franzhoek I've been spitting out a lot of wine I drink, if for instance I want to see how a wine that has sat overnight in a glass has changed after vigorous oxidation for 12 hours. But I dont really want to take a swig at 9am, so I spit. My sink is white enamel and in the wine and saliva mixture I see these strands. Are these coagulated proteins in the wine being acted upon by salivary enzymes, or is it simply snotty tissue died a la iodine?
